I don’t know how to keep track of which sentences I understand or don’t understand in the quiz section.
How can I learn to use this app better?

There isn’t a separate checkbox or status specifically for sentences (as opposed to words) that would indicate “I understand this” vs. “I don’t understand this” - the way it works for individual words (Known/Learning).
You can save a sentence (by clicking the star icon next to the sentence or pressing the R key) in the “Saved” section.
You can then use the saved sentence for practice in PhrasePump.
